Summer season is here, and much to everyone’s dismay, it does not come with a coy knock but rather barges in, breaking through with agonising heatwaves, scalding loos, and the unforgiving sun relentlessly making you sweat. The romantic image of a breezy tropical summer begins to dissipate. But don’t let the heat crush you yet, as you can still beat the summer heat and brighten your days with rejuvenating drinks and seasonal fruits.

Chef Sanjeev Kapoor took to his Instagram on 31 April to share an invigorating summer drink that’s cooling and soothing. It is called the Coconut Lime Cooler, a perfect way to stay cool throughout the day.

Recipe

Ingredients

  • ½ cup water
  • 3 tbps agar powder
  • ¼ cup sugar
  • ¼ cup tender coconut flesh
  • 3-4 edible flowers
  • Ice cubes
  • Mint leaves
  • Lemon
  • Coconut water
  • Drinking soda

Method:

  • In a pan, add water and, agar powder, sugar and stir till the sugar melts.
  • Then, in a separate baking tray, add coconut flesh, edible flower, and pour the agar powder mixture. Set aside for 1 hour.
  • After the jelly sets, cut it into small cubes.
  • Add the coconut cubes to a glass, along with a generous amount of ice cubes.
  • For flavour, add mint leaves and lemon slices.
  • Pour coconut water and drinking soda. Voila, the drink is ready.

Benefits of coconut and lime

The chef mentioned the benefits of these two hero ingredients of the drink, calling them a perfect combination, “Coconut water body ko hydrate rakhta hai, aur lime usmein ek fresh flavour le aata hai.” [Coconut water keeps the body hydrated, while lime adds a fresh flavour to it].

According to Healthline, coconut’s nutritional properties include high antioxidant content, fibre, and low carbs. Coconut also helps balance electrolytes. Lime, on the other hand, is high in vitamin C and is also a good source of antioxidants, which help improve the skin’s glow.
