Mango is one of the most versatile fruits which goes in a variety of dishes throughout the summer. However, if you are bored with all the usual recipes, celebrity chef and MasterChef India judge Kunal Kapur has something new for you to try.
Taking to Instagram on August 8, he shared the recipe for raw mango pulao, describing the dish in the caption as: “Tangy, fragrant and packed with the freshest raw mango flavour! This raw mango pulao is the perfect way to turn those seasonal kacche aam into something deliciously comforting. With fluffy rice, aromatic spices and that irresistible sweet-sour kick from raw mango, this one is a must-try for your summer table. It’s easy to make, comes together beautifully, and tastes even better the next day.”
The recipe can be prepared in just 15 minutes and serves two. The detailed steps to make the dish are presented as follows.
Ingredients for raw mango pulao
- Oil – 3 tbsp
- Asafoetida (hing) – ½ tsp
- Mustard seeds – 1 tsp
- Dry red chilli – 4
- Ginger, chopped – 2 tsp
- Onion, chopped – 5 tbsp
- Garlic, chopped – 2 tsp
- Raw mango, chopped – ½ cup
- Salt – to taste
- Curry leaves – handful
- Boiled rice – 2½ cups
- Green chilli, chopped – 1
- Fresh coriander leaves, chopped – handful
- Water – a dash
Method of preparation
- First, make sure your rice is cooked and ready. Then, take a raw mango and cut it into very small cubes. Keep them aside.
- Next, in a pan, heat oil. Add red chilli and mustard seeds. Once they pop, add asafoetida (hing) and give the mix a quick stir.
- Now add to the pan finely chopped ginger, finely chopped onion and finely chopped garlic. Sauté for a while, but do not let the onions turn brown.
- Then toss in the raw mangoes, and add the curry leaves. Cook for two minutes.
- Add rice and a chopped green chilli. Sprinkle salt and add a little water, just enough to moisten the rice.
- Toss the rice until sufficiently hot. Sprinkle with fresh coriander leaves.
- Remove from the heat and serve hot.
