Kolkata: After Covid, LPG shortage was another eye-opener for the heritage as well as new-age social clubs of the city. The majority of the social clubs are now deciding to keep a parallel electronic cooking system along with LPG for the future. The supply of commercial LPG has improved in the last few days and most of the clubs are mixing both electronic systems and LPG in their kitchen.The President of Calcutta Club, Kasturi Raha, pointed out that now Chinese and some other cooking are majorly done on inductions. It has also restricted tandoor items. “The gas supply in club kitchen has improved but we are doing a mix of gas and induction. Like continental items are now more oven-based,” she added. The CEO of Tolly Club, V Ganapathy, said it is kind of a mixed bag for them. “Electronic-based equipment now accounts for at least 50% of cooking and going forward what would happen time will tell,” he added. The secretary of Calcutta Rowing Club, Chandan Roychowdhury, pointed out that it is 50:50 for the club as far as cooking is concerned between LPG and electronic medium. “Now the LPG crisis is relatively less than what it was earlier but we are keeping the electronic cooking system,” he added. Subrata Guha, jt secretary, Lake Club, also added that it is using a mix of electronic cooking and gas. “We are getting LPG supply but not in the desired quantity so we are restricting member’s party or get-together for the time being,” he added.The manager operation of Princeton Club, Sanjay Karmakar, pointed out that they will keep a second line of defence for the future. “Now LPG supply has normalised a bit. We can say that we are getting 40% of our requirement so far and the rest is electronic,” he added. The secretary of new-age Eastern Metropolitan Club, Sanjib Ghosh, pointed out that it is using both electronic oven and induction along with LPG now.
